What I Make Right Before Starting the Green Juice Challenge

Every reset has a beginning. For me, it starts with a bowl of vegetables, seeds, and beans tossed together with a creamy garlic dressing.

On its own, this salad is colorful, filling, and full of flavor. But it also carries a purpose, it’s the way I prepare myself before stepping into the 10-Day Green Juice Challenge. Eating something clean and grounding makes the shift into juicing smoother, both physically and mentally.

This isn’t about perfection. It’s about creating a foundation that feels supportive. For some, that first step might look different. For me, it’s this salad.
So if you’re thinking about joining the challenge, or even if you’re just looking for one simple meal to help you reset, this might be a good place to start.

Because sometimes the path to change begins with a single plate of food.
If you’ve ever felt stuck, tired, or stretched thin, maybe your next step is as simple as choosing foods that lift you up instead of weighing you down.

Ingredients (recipe style):
  • 2 ½ cups spring mix or salad greens
  • 1 cup shredded red cabbage
  • ½ cup shredded carrots
  • ½ cup red onion, thinly sliced
  • ½ cup black beans
  • ½ cup corn
  • ½ cup lima beans
  • ½ cup chickpeas
  • ¼ cup alfalfa sprouts
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons hemp seeds
Creamy Garlic Dressing:
  • ½ cup cashews (soaked at least 2 hours)
  • ½ clove fresh garlic
  • ¼ cup water
  • Juice of ½ lemon
  • 1 pinch sea salt, or to taste

ABOUT HAROLD LEFFALL

Harold Leffall is an entrepreneur, author, cancer survivor, father, speaker, and wellness contributor who helps people make healthier living practical and approachable. Drawing from his personal health journey, Harold shares realistic, food-first strategies centered on nutritious eating, juicing, healthy habits, and intentional living.

He is the author of several books, including Juicing 101 and Eating to Live, and serves as a wellness contributor on WCCB News Rising and Positively Charlotte. He has also appeared on Good Day Charlotte and has been featured in publications including Entrepreneur and Black Enterprise.

​As the founder of Good Living Now, Harold combines lived experience, business leadership, and practical wellness education to create engaging conversations and demonstrations that viewers can apply in their everyday lives. His television topics include juicing, healthy recipes, food preparation, wellness after 40, fasting preparation, stress management, sleep support, and simple ways to build healthier habits.
